This is a really great curry sauce to add to roasted veggies, or you can enjoy it on its own with pasta. Thanks Jamie for the recipe inspiration:

1 Tablespoon olive oil
1 onion sliced onion
2 teaspoons minced garlic
1 teaspoon ground coriander
1 teaspoon turmeric
1 – 2 teaspoon(s) masala (or any curry powder you prefer)
1 400g tin tomato and onion mix


  1. In a small pot on a medium-high heat, add the olive oil, onions and garlic, and cook until the onions are sautéed and soft.
  2. Add the spices and cook for about 2 minutes (until fragrant) for about 2 minutes.
  3. Pour in the tin of tomato mix, and simmer for 5 minutes, stirring occasionally.
  4. Add cooked veggies (or grilled chicken for the non-veggie folks) and serve. I sometimes even use this as a sauce for pasta or rice.
